Vegetable Kabobs

Yield: 6 Large Skewers


1 Red Onion

1 Summer Squash

1 Zucchini

1 Green Pepper

¼ Cup Olive Oil

1 tsp Salt

1 tsp Black Pepper

Herbs of Choice


  1. Cut vegetables to desired size. Suggested: 1 ½ -2 inch squares/cubes.

  2. Drizzle Olive Oil on vegetables to coat them.

  3. Sprinkle Salt, Pepper, and dried herbs of preference.

  4. Place vegetables on skewer, alternating each vegetable until each skewer is filled (Recipe makes about 6 long skewers.

  5. Place on hot grill, cook each side for 4-5 minutes. The entire cooking process will take 15-20 minutes. The longer it is cooked the softer and more charred the vegetables become. This is all based on preference.
