Two-Ingredient Egg Cups



3 Large Potatoes

12 Eggs

Salt & Pepper to Taste




  1. Bake the potatoes in 400 Degree oven for 45-60 minutes.

  2. Once Cooked, Remove the skin from the potatoes. Mash them in a bowl.

  3. Using non-stick spray, grease a muffin tin.

  4. Distribute the mashed potatoes into the 12 Cups. Press them down to bottom and up the sides. This will form a cup.

  5. Once Completed, crack one egg in each cup.

  6. Bake at 350 Degrees for 20 Minutes.



Qualifies as Vegetarian and Whole 30. For Softer Eggs, Bake for 10-15 minutes.
