Two-Ingredient Egg Cups
3 Large Potatoes
Salt & Pepper to Taste
Bake the potatoes in 400 Degree oven for 45-60 minutes.
Once Cooked, Remove the skin from the potatoes. Mash them in a bowl.
Using non-stick spray, grease a muffin tin.
Distribute the mashed potatoes into the 12 Cups. Press them down to bottom and up the sides. This will form a cup.
Once Completed, crack one egg in each cup.
Bake at 350 Degrees for 20 Minutes.
Qualifies as Vegetarian and Whole 30. For Softer Eggs, Bake for 10-15 minutes.
