Eggs Benedict
Yield: 2 Servings
Ingredients
Hollandaise Sauce
½ Cup Butter
4 Egg Yolks
Juice of ½ Lemon
Dash Cayenne Pepper
Salt to taste
Eggs Benedict
4 Eggs
2 English Muffins
4 Slices Canadian Bacon
Instructions

Follow hollandaise sauce instructions to make sauce. Set aside until ready to serve.

Poach all four eggs. Bring water in a pot to a simmer on medium heat. The water should not be boiling. Add 1 Tbl of vinegar to pot. Gently swirl the water (to keep egg together), add egg. Cooks for four minutes. Remove with slotted spoon. Repeat for each egg.

Using a toaster or conventional oven, toast the English Muffins.

In a small skillet, gently cook each slice of Canadian bacon for 30-60 seconds.

Plating: Place English Muffin slices on to plate. Add Canadian Bacon slice on top of each English muffin slice. Place poached egg on each muffin/bacon.

To finish, drizzle hollandaise sauce on top of Eggs and Muffin.

Garnish with herb of choice.
Eggs Benedict Variations & Substitutions
There are a variety of Eggs Benedict variations. These variations are based on replacements of the traditional ingredients, or additions of new ingredients.
Salmon Benedict
Replace Canadian Bacon with smoked Salmon.
Lobster Benedict
Replace Canadian Bacon with lobster.
Crab Cake Benedict
Replace Canadian Bacon with baked crab cakes.
Spinach Pesto Benedict
Replace Canadian Bacon with Spinach leaves. Serve with a dollop of pesto sauce on the side or mixed with hollandaise sauce.
Southern Benedict
Replace Canadian Bacon with sausage patty and serve on a biscuit instead of English Muffin.
Bacon Benedict
Replace Canadian Bacon with traditional strip Bacon.
Steak Benedict
Replace Canadian Bacon with 4 oz steak.
Caprese Benedict
Use Tomato and mozzarella slices instead of Canadian Bacon.
Southwest Style Benedict
Add Black Beans instead of Bacon. Top with Salsa over the hollandaise. Garnish with cilantro. Serve with avocado slices.
Greek Benedict
Lamb meat, tomato, and feta cheese.
Portobello Benedict
Use large portobello mushrooms as meat base. Great for vegetarians.
Spicy Benedict
Add Siracha or other hot sauce to spice up the hollandaise sauce.
Irish Benedict
Corned Beef and Cabbage Hash served on Irish Soda Bread.
Country Benedict
Country sausage or ham on a biscuit. Served with a side of country gravy.
Pulled Pork Benedict
Replace Canadian Bacon with pulled pork. Serve with a dollop of barbecue sauce.

Waffles, bed of fried chicken, poached eggs, and topped with hollandaise sauce.
