Eggs Benedict

Yield: 2 Servings

Ingredients

Hollandaise Sauce

½ Cup Butter

4 Egg Yolks

Juice of ½ Lemon

Dash Cayenne Pepper

Salt to taste

Eggs Benedict

4 Eggs

2 English Muffins

4 Slices Canadian Bacon

Instructions

  1. Follow hollandaise sauce instructions to make sauce. Set aside until ready to serve.

  2. Poach all four eggs. Bring water in a pot to a simmer on medium heat. The water should not be boiling. Add 1 Tbl of vinegar to pot. Gently swirl the water (to keep egg together), add egg. Cooks for four minutes. Remove with slotted spoon. Repeat for each egg.

  3. Using a toaster or conventional oven, toast the English Muffins.

  4. In a small skillet, gently cook each slice of Canadian bacon for 30-60 seconds.

  5. Plating: Place English Muffin slices on to plate. Add Canadian Bacon slice on top of each English muffin slice. Place poached egg on each muffin/bacon.

  6. To finish, drizzle hollandaise sauce on top of Eggs and Muffin.

  7. Garnish with herb of choice.
