Mac & Cheese

Ingredients

2 Cup Uncooked Pasta

2 Tbl Butter

2 Tbl Flour

½ tsp Salt

1 Cup Milk

1/2 Cup (4 oz) Cheddar Cheese

 

For Baked Mac & Cheese:

1 Tbl Butter

¼ Cup Breadcrumbs

 

Optional Add-ins:

Bacon

Ground Beef

Hot Dogs

Ham

Broccoli (Steamed)

Onions (Sautéed)

Peppers (Sautéed)

 

Instructions

  1. Bring water to boil in small pot. Add ½ tsp salt to boil water quicker. Once boiling, cook pasta for 10 minutes or until tender. Drain pasta using a colander. Rinse and set aside.

  2. Optional: Prepare and cook add-ins.

  3. To make the cheese sauce:

  1. Melt butter in small saucepan.

  2. Add flour and salt to melted butter.

  3. Mix until combined and becomes bubbly. This is the roux.

  4. Add milk, using whisk, make small circles into a large circle to break up the roux in the milk.

  5. When Milk and roux become noticeably thicker, remove from heat.

  6. Slowly add cheese and stir until combined and a uniform sauce.

  1. In a pot, pour cheese sauce over the pasta. Mix until combined.

  2. Optional: Stir in optional additions.

  3. Add salt & pepper to taste.

  4. Garnish with parsley or preferred herbs.

For Baked Mac & Cheese:

  1. Preheat Oven to 350 Degrees.

  2. Follow previous directions for mac & Cheese.

  3. In a small skillet, melt butter and add breadcrumbs. Cook for 1 minute. Do not burn.

  4. In a prepared baking pan, pour cooked pasta and cheese sauce. Mix until combined. Flatten out. Sprinkle breadcrumbs over top.

  5. Cook for 15-20 minutes or until bubbly.

For Lower Fat and Calorie Macaroni & Cheese:

Replace butter with margarine, milk/cream with low-fat or skim milk, use 1/3 cup low-fat or part-skim cheese. Do not use butter with breadcrumbs, or breadcrumbs at all. Use vegetables such as onions, broccoli, or peppers as additions.
