Chicken Stuffed Quesadillas
¼ Cup Diced Green Peppers
¼ Cup Diced Red Peppers
1 Cup Shredded Chicken
½ Cup Shredded Cheddar Cheese
2 Tbl Oil
Pinch Chili Powder
Pinch Blacker Pepper
Pinch Garlic Powder
Salsa (See Salsa Recipe)
Gently sauté green and red peppers in a skillet until tender.
Optional: Season chicken with recommended spices.
Lay out tortillas. Using one half of each tortilla, sprinkle half of the cheese on them.
Place shredded chicken even on each tortilla over the cheese. Do the same with the cooked with peppers.
Sprinkle the remaining cheese onto the uncooked quesadillas. Fold each in half. They will look like a half moon.
Heat oil in a skillet or on a griddle. Place folded quesadillas into pan or on griddle. Cook for 2-3 minutes or until golden brown with a few char marks.
Flip the quesadilla to uncooked side. Repeat Step 6.
Once finished cut into four equal pieces and serve. Optional: Serve with salsa and sour cream.
